The Selva Giurata pasta is made of 100% Italian durum wheat semolina, single grain of the Marco Aurelio variety.

The Marco Aurelio variety single-grain durum wheat semolina pasta is handcrafted with pure water from the Sibillini Mountains aqueduct and with semolina from durum wheat grown in Selva Giurata.  75% of the fields which are located in San Benedetto del Tronto, are within the "Sentina" Regional Nature Reserve.

The Quaderno di Campagna confirms the use of reduced fertilisation and treatments in order to produce a natural, simple and healthy grain.

The pasta is bronze extruded so that the surface of the different shapes is rough and porous to best accompany all condiments.

The drying is slow and carried out at temperatures below 45° to maintain organoleptic properties of the raw material, original flavours and aromas of the semolina unaltered.
